Raw Ginger & Coconut Biscuits

Not only is Christmas my favourite time of year but the food in particular is too good for words (excuse the constant mouthful). On the other hand, if you are trying to choose healthier snacks before a Christmas Day feast, these Raw Ginger & Coconut Biscuits are perfect for you!

They contain just five ingredients and taste delicious, especially with a hot chocolate or cup of tea – and with no added sugar, sweeteners, syrup; additives or preservatives, you have all the more reason to grab a couple more!

For this recipe (to make around 12) you need:

• 150g oats
• 100g roasted almonds
• 100g coconut oil
• 9g ground ginger
• 8g ground cinnamon
• 1 heaped tsp/10g Winter Nut Butter (optional)

Use a processor to blitz the oats and almonds until they become a flour consistency. Mix in the ginger and cinnamon and leave to one side.

Melt the coconut oil until it becomes a liquid and add the flour mixture. Stir all the ingredients together until everything is well combined – it might feel slightly wet/sticky but the mixture will solidify as soon you refrigerate it.

Mould the mixture into flat biscuit-like shapes or balls – however you prefer – and pop them into the fridge to chill. Wait at least half an hour before serving and sharing with friends and family.

NB. Dunk them into Nut Blend Indulgent Nut Butter (or almond/peanut/cashew butter) for an even more indulgent but totally guilt-free snack!

For taking just 5 minutes to make, these raw ginger biscuits are delicious and ideal for when you’re running around (last minute Christmas shopping?) and need a healthy, wholesome energy boost. They’re also very versatile and you can add or substitute ingredients to tailor them to your taste buds (adding raw cacao and raw cacao nibs is a personal favourite).
